2. How to Follow Easy Steps to Healthy Eating
Eat more foods containing fiber and more starches:
- Include beans, peas, rice, oats and bran.
- Eat more starches like pasta, potatoes, grains, and fresh fruits and vegetables daily. Select whole-grain cereals, crackers and breads.
Use a reduced amount of salt:
- Add flavor to food by using herbs and spices when cooking instead of salt.
- Consume foods that are salty by using less of pickles, hotdogs, canned soup, sausage, bacon, chips and other fast foods that contain a lot of salt.
- Remove the salt shaker from the table.
Consume less fat like animal fat:
- Minimize frying foods. Instead poach, broil, boil, bake, steam and grill.
- Reduce foods high in fat like sausage, nuts and cold cuts and such add-ons as margarine, oil, butter, lard, shortening, gravy and salad dressing.
- Use skim and low-fat dairy products. Stay away from whole meilk, cheeses that contain high-fat, cream and eggs.
- Reduce consumption of red meat especially the high-fat cuts. Instead eat turkey and chicken without the skin, fish, vegetable dishes like beans nas lean meats.
- Use low-fat flavorings to season food flavored vinegars, lime or lemon juice, salad dressings that are low in calories, and yogurt that is low in fat instead of margarine, butter, sour cream and other selections that are high in fat.
- Keep yourself informed of the latest news on diabetes.
Reduce sugar consumption:
- Use sugar substitute instead of sugar. When shopping for prepared foods, look for ones using substitute sugars instead of the real sugar.
- Drink sugar-free soft drinks containing low calorie instead of the ones with added sugar.
- If you want something sweet, go for diet gelatin with or without fruit, angel-food cake, graham crackers, jams and jellies containing low sugar and non fat yogurt that is sweetened artificially.
- Consume less honey, cookies, pie, cake, jelly, table sugar and other sweets.

We are the change we want to see in this world. We are the models for the world to follow because we will persevere. We might fall sometimes but we will get up and try again. Keep it up!

4. Trivia: Do You Know?
It is not true that just because you're on insulin therapy you have type 1 diabetes. While it is true that type 1 diabetics have to take insulin because their pancreas no longer make them, some type 2 diabetics need to take extra insulin to overcome their resistance to insulin.
5. And here’s the dessert recipe we promised you.
Chilled Fruit Salad
3/4 cup sliced banana
3/4 cup diced fresh pineapple
3/4 cup seedless grapes, each cut in half
3/4 cup sections of grapefruit
3/4 cup pineapple juice, unseetened
1/8 cup water
1/8 cup orange juice concentrate
a. In a large bowl, put all the above ingredients, mixing them.
b. Pour the above mixture in baking dish large enough to contain all.
c. Cover and put in the freezer for eight hours.
d. One hour before serving, take it out of the freezer.
Each serving has these 55 calories, .2 grams fat, .05 grams of saturated fat, .05 grams of polyunsaturated fats, 0 grams of monounsaturated fats, 14 grams of carbohydrates, .9 gram of fiber, 1 milligram of sodium, .6 gram of protein and 0 milligrams of cholesterol.

We received some questions based on the Newsletter Issue #805 and here's one we want to address here. A type 1 diabetic sent the following information. He is 5 ft. 4.5 inches tall and weighs between 110 and 114.4 pounds and wants to know how he can maintain his weight at 132 pounds. The Diabetes Prevention Program recommends for those whose starting weight is between 120 - 170 pounds to limit fat intake to 33 grams and the calories to 1200. In this case he can increase his fat intake to 42 grams and the calories to 1500 until he reaches 132 pounds and then he can scale back to 33 grams of fat and 1200 calories to maintain his desired weight. This is of course generally speaking as we do not know his overall health condition. The best thing for him is to consult with his doctor and dietitian who will be able to give the final recommendation.
