2. How to Cope with Diabetes and Live a Healthy Life

  • The first thing to do is to accept the fact that diabetes is here to stay. The sooner this is out of the way, the sooner we can start learning about this condition to beat it.
  • Shop for a health care team who will understand you, answer your questions and concerns and suggest the best strategies to beat diabetes.
  • Realize that poor blood sugar control can create havoc even when you are feeling well.
  • Learn and read everything about diabetes while keeping an open mind.
  • Know that with you as the captain, the health care team will help control the diabetes by eating healthy, exercising, doing SMBG (self monitoring of blood glucose level) and taking medications if prescribed.
  • Know yourself by observing how your body responds to medication, meals, exercise and report the findings to the health care so they will be alerted to any changes that your diabetes care plan may need.
  • Keep yourself informed of the latest news on diabetes.

4. Trivia: Do You Know? Sweet Potatoes look like the pancreas and actually balance the glycemic index of diabetics?

5. And here’s the dessert recipe we promised you.

Tasty Pumpkin Custard

Ingredients:

1 tbsp. honey 1/8 cup sugar 1/2 tsp. ground allspice 3/4 tsp. ground cinnamon 1 egg 6 oz. canned evaporated skim milk 8 oz. canned cooked pumpkin 1/4 cup low calorie whipped topping Procedure:

a. Set the oven to preheat at 325 F.

b. In a large bowl, mix together the first seven ingrdients.

c. Beat the mixture in an electric mixer.

d. Pour 1/2 cup of the mixture into each of 4 custard cups.

e. Place the 4 custard cups on a 9-inch square baking pan.

f. Pour hot water into the pan to 1 inch deep.

g. Bake for 1 hour or until set.

h. Cool the custard cups after removing them from the pan.

i. Place 1 tbsp of whipped topping on each of the custard cups.
